Happy Birthday Dulce de Leche !

.. Where's my cake? ..

Yes! I baked cupcakes for our 1 year old labrodoodle . The recipe turned out great so I thought I'd share it. 

Peanut Butter Pupcakes
1 cup   flour
1 tsp  baking soda
1/4  cup peanut butter  ( at room temperature )
1/4  cup vegetable oil
1  cup shredded carrots
1  tsp vanilla
1/3  cup honey
1 egg 

                             Preheat Oven to 350 
Combine dry ingredients. Blend peanut butter, oil and honey together in a separate bowl. Add vanilla and egg to the peanut butter mixture. Next stir in flour mixture until well blended. Fill lined or well greased muffin tin to 2/3 full. Bake approximately 25 min. or until muffin tops are springy to touch. Let cool on rack before icing.   

12  oz    cream cheese
3  tsp    ground cinnamon
1  tsp    vanilla
1  tsp    honey
1  tsp   peanut butter

Have all ingredients at room temperature before starting. Combine all ingredients in one bowl and mix until well blended. Pipe icing onto cooled Pupcakes or for a more homemade look pile on icing with a offset spatual. Let your Pup enjoy!  Oh yeah....don't forget to the remove paper liner if used before serving.
